It is definitely soup season, so today I am going to share the Best Tomato Soup Recipe I have ever tasted.
For the past 9 months, I have been working on creating my very best program ever for slimming down and toning up fast.

Here is the Tomato Soup Recipe
Vix’s Tasty Tomato Soup
Ingredients
1 tablespoon olive oil
1 large brown onion, chopped
2 garlic cloves, crushed
300g potatoes, peeled, chopped
600g fresh tomatoes, chopped
200g cauliflower
2 tablespoons tomato paste
3 cups Stock (Chicken or vegetable stock)
1/4 cup fresh basil leaves
Salt and pepper to taste
120g cooked chicken Shredded
(Vegan Swap: Replace chicken with 150g of shredded tofu or 180g chickpeas )
Instructions
Heat oil in a large saucepan over medium-high heat.
Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened.
Add tomatoes, cauliflower and potato.
Add tomato paste.
Cook for 1 minute.
Step 2
Add stock.
Season with pepper.
Cover.
Bring to the boil.
Reduce heat to medium-low.
Simmer for 15 to 20 minutes or until potato is tender.
Set aside for 5 minutes to cool slightly.
Step 3:
Add basil.
Blend, in batches, until smooth.
To blend soup, use a stick blender, jug blender (do not put hot liquid into a blender ā cool first or it will crack) or food processor.
DivideĀ soup into 3 bowls/portions andĀ top each serve with 40g Cooked Shredded Chicken or (50g tofu or 60g Chickpeas for a Vegan version)
Optional:Ā dress and serveĀ with fresh herbs, chilli flakes. fresh tomato slices
Freezer tip: This soup is suitable to freeze after blending.
